Ingredients
2 tbsp neutral oil
2 New York strip steaks
Kosher salt
Black pepper
4 tbsp salted butter
1 shallot, halved
1 garlic bulb, halved
Heat the neutral oil in a large skillet over medium-high heat until hot.
Generously season the steaks with salt and pepper on both sides.
Add the steaks to the hot skillet and sear for 3 minutes on the first side until browned. Flip and cook for another 3 minutes on the other side.
Once the steaks are done, lower the heat to medium and add the butter, shallot, and garlic bulb. As the butter melts, use a spoon to baste the steaks with the melted butter, shallots, and garlic for 2-3 minutes.
Remove the steaks, and optionally serve them on a bed of arugula that’s been tossed in red wine vinegar and olive oil.
