Ingredients

8-9 cups of water
1 chicken carcass (and scraps)
1 yellow onion sliced in half
1 shallot sliced in half
1 ginger root sliced in thin strips
1 turmeric root sliced in thin strips
1 whole garlic bulb sliced in half
1 bunch of parsley
1 bunch of thyme
1 lemon sliced in half
Drizzle of olive oil
Pinch of salt
Optional: 1 fresno pepper for spice

Directions

  • In a large pot, add your water, all sliced herbs, and vegetables. Bring to a simmer, adding your chicken carcass and scraps. Sprinkle with a pinch of salt, and a drizzle of olive oil.

  • Place on a low simmer, cover with a lid for 4-5 hours until water becomes a dark yellow and the bones are soft.

  • Strain all broth into a large jar, and place in the fridge. Serve warm in a glass with lemon juice, and cracked black pepper.
