Ingredients
Salad
3 golden beets, greens removed and washed
3 medium size carrots, washed and peeled
1 English cucumber, peeled, seeded and chopped
2 tbsp fresh cilantro, roughly chopped
Dressing
juice of a lime
1 clove of garlic, minced
2 tbsp olive oil
salt to taste
Directions
In a steaming basket add the beets and carrots over medium heat. Steam the carrots and beets until tender. About 30 minutes for the beets and 15-20 minutes for the carrots.
While the beets and carrots are steaming, make the dressing by adding the lime juice, garlic, olive oil, and salt to a bowl. Whisk to combine then toss in your cucumber.
Once the beets and carrots are done, set aside to cool for a bit then peel the skin off the beets.
Chop the carrots and beets into bite size pieces and transfer to the bowl with the cucumbers and dressing.
Add the cilantro and toss everything together. Enjoy immediately. (PRO TIP: make this a few hours before serving to let the flavors sit for a bit.)
