Ingredients

Salad
3 golden beets, greens removed and washed
3 medium size carrots, washed and peeled
1 English cucumber, peeled, seeded and chopped
2 tbsp fresh cilantro, roughly chopped 


Dressing 
juice of a lime 
1 clove of garlic, minced
2 tbsp olive oil
salt to taste
 

Directions

  • In a steaming basket add the beets and carrots over medium heat. Steam the carrots and beets until tender. About 30 minutes for the beets and 15-20 minutes for the carrots.

  • While the beets and carrots are steaming, make the dressing by adding the lime juice, garlic, olive oil, and salt to a bowl. Whisk to combine then toss in your cucumber.

  • Once the beets and carrots are done, set aside to cool for a bit then peel the skin off the beets. 

  • Chop the carrots and beets into bite size pieces and transfer to the bowl with the cucumbers and dressing.

  • Add the cilantro and toss everything together. Enjoy immediately. (PRO TIP: make this a few hours before serving to let the flavors sit for a bit.)
