Ingredients

1 frozen heirloom tomato 
4 anchovy filets 
1 tbsp lemon juice
Pinch of salt 
½ cup unsalted butter, room temperature 
2 tbsp chopped parsley 
1 clove garlic
Toasted bread of your choice (ciabatta, focaccia, country loaf, etc.)

Directions

  • In a bowl, mash the anchovies, lemon juice, and salt with the back of a fork.

  • Fold in the butter and parsley until smooth, then set aside.

  • Rub the garlic clove on your freshly toasted bread, then add a generous schmear of anchovy butter onto the toast.

  • Using a microplane, grate the frozen tomato on top of the toast. Top with flaky salt and enjoy immediately!
