Ingredients
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs + 1 egg yolk
½ cup neutral oil
1 ¼ cup pumpkin puree
1 tsp kosher salt
2 tsp ground ginger
1 ½ tsp ground cinnamon
1.2 tsp ground nutmeg
2 tsp baking powder
½ tsp baking soda
1 tbsp vanilla extract
1 ¼ cup all-purpose flour
Cinnamon sugar mix (¼ cup granulated sugar, 2 tsp ground cinnamon)
Directions
Preheat the oven to 350°F. Grease and line a loaf pan with parchment paper.
Add the salt, ground ginger, cinnamon, nutmeg, baking powder, and baking soda into a bowl and whisk until well combined.
In a separate mixing bowl, whisk the brown sugar, granulated sugar, eggs, and egg yolk until smooth. Add the oil, pumpkin puree, and vanilla extract, and whisk until all ingredients are fully combined.
Add the dry ingredients to the bowl and gently fold it into the wet ingredients until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Sprinkle cinnamon sugar mixture over the top.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
