Ingredients

Biscuits
1 ½ cup flour 
1 tbsp baking powder 
½ tsp kosher salt 
2 tbsp sugar 
½ cup cold cubed butter
¼ cup heavy cream 
¼ cup whole milk 
½ tbsp vinegar

Strawberry Mixture
2 cups sliced strawberries 
¼ cup sugar 
Juice of 1 lemon 
Pinch of salt 

Whipped Cream
1- 1 ½ cups heavy whipping cream
¼ cup sour cream
¼ cup powdered sugar
Pinch of salt 
1 tsp vanilla extract 

Directions

  • Preheat the oven to 400 F. 

  • For the Biscuits, whisk all of the dry ingredients together in a large bowl.

  • Add the cold butter, and smash the butter into the flour until the mixture feels like wet sand.

  • Whisk heavy cream, milk, and vinegar together, then pour the cream mixture into the flour mixture.

  • Gently stir until everything is just combined. Place ¼ cup of flour onto a cutting board, then transfer the dough onto the floured surface.

  • Using a bench scraper, cut, stack, and press down onto the dough, until the ¼ cup of flour is well-incorporated into the dough. Cut into 4 squares.

  • Place onto a parchment lined baking sheet, brush the tops with heavy cream and sprinkle sugar. Bake for 20-25 minutes.

  • For the Strawberry Mixture, mix everything together and gently smush the strawberries with a whisk to release its juices. Let the mixture sit in the fridge for at least 15 min.

  • For the Whipped Cream, whisk everything together until you have soft peaks. 

  • Once the biscuits are out of the oven, immediately serve with strawberries and whipped cream.
