Ingredients
Biscuits
1 ½ cup flour
1 tbsp baking powder
½ tsp kosher salt
2 tbsp sugar
½ cup cold cubed butter
¼ cup heavy cream
¼ cup whole milk
½ tbsp vinegar
Strawberry Mixture
2 cups sliced strawberries
¼ cup sugar
Juice of 1 lemon
Pinch of salt
Whipped Cream
1- 1 ½ cups heavy whipping cream
¼ cup sour cream
¼ cup powdered sugar
Pinch of salt
1 tsp vanilla extract
Directions
Preheat the oven to 400 F.
For the Biscuits, whisk all of the dry ingredients together in a large bowl.
Add the cold butter, and smash the butter into the flour until the mixture feels like wet sand.
Whisk heavy cream, milk, and vinegar together, then pour the cream mixture into the flour mixture.
Gently stir until everything is just combined. Place ¼ cup of flour onto a cutting board, then transfer the dough onto the floured surface.
Using a bench scraper, cut, stack, and press down onto the dough, until the ¼ cup of flour is well-incorporated into the dough. Cut into 4 squares.
Place onto a parchment lined baking sheet, brush the tops with heavy cream and sprinkle sugar. Bake for 20-25 minutes.
For the Strawberry Mixture, mix everything together and gently smush the strawberries with a whisk to release its juices. Let the mixture sit in the fridge for at least 15 min.
For the Whipped Cream, whisk everything together until you have soft peaks.
Once the biscuits are out of the oven, immediately serve with strawberries and whipped cream.
