Ingredients

3 heads of corn, corn cut off 
¼ cup pepitas
1 english cucumber, sliced
2 mangos skinned and chopped
½ white onion, fine dice 
1 serrano or jalapeno, sliced 
Zest of one lime 
Juice of 3 limes 
¼ cup cilantro, chopped 
Handful of fresh mint, sliced 
3-4 tbsp olive oil 
Spoonful of honey or agave 
Salt to taste

Directions

  • On a pan over medium heat, add the corn kernels followed by the pepitas. Cook until corn is deep golden. About 6-8 minutes.

  • To a large bowl add the cucumber, mango, white onion, serrano, lime zest and juice, cilantro, mint, olive oil, honey, and salt together.

  • Let the corn and pepitas mixture cool off for a bit before adding it to the bowl.

  • Give it all a good mix and enjoy!
