Ingredients
1 cup white distilled vinegar
1⁄4 cup apple cider vinegar
1 1⁄4 cups water
2 teaspoons sea salt
1 tablespoon sugar
1 tablespoon of peppercorns
1 tablespoon of mustard seeds
4 cups of sliced winter vegetables (carrots, cauliflower, beets, radish)

Directions
Wash, and chop your veggies. Use the mini cookie cutters to cut out shapes from the veggie slices. Add all veggies to a large jar.
In a pot, add your vinegar, sugar and water. Bring to a boil and remove from the heat. Pour over your veggies, adding salt, peppercorns and mustard seeds to the jar.
Mix, and seal the lid of the jar after it has cooled. Place in the fridge, and let sit for 2 days to fully pickle. Enjoy!
