Ingredients

1 cup white distilled vinegar
1⁄4 cup apple cider vinegar
1 1⁄4 cups water
2 teaspoons sea salt
1 tablespoon sugar
1 tablespoon of peppercorns
1 tablespoon of mustard seeds
4 cups of sliced winter vegetables (carrots, cauliflower, beets, radish)

Directions

  • Wash, and chop your veggies. Use the mini cookie cutters to cut out shapes from the veggie slices. Add all veggies to a large jar.

  • In a pot, add your vinegar, sugar and water. Bring to a boil and remove from the heat. Pour over your veggies, adding salt, peppercorns and mustard seeds to the jar.

  • Mix, and seal the lid of the jar after it has cooled. Place in the fridge, and let sit for 2 days to fully pickle. Enjoy!
