Tomato purée tossed with olive oil, garlic, and served and fried sourdough bread, finely grated manchego cheese and fresh oregano. Watch the full recipe video here!
Ingredients
4 slices fresh sourdough bread
2 large ripe tomatoes
2 cloves garlic
1/4 cup extra-virgin olive oil
Flakey sea salt
Freshly ground pepper
¼ cup fresh oregano
¾ cup finely grated manchego cheese
Directions
Cut the tomatoes in half. You can use a grater to grate the tomato flesh directly into a bowl, discarding the skins.
Drizzle olive oil into the bowl of tomato puree and season with salt and pepper. Let marinade for 5-10 minutes while you prepare the bread.
Drizzle olive oil over the slices of bread on both sides. Heat up your skillet and cook both sides of the bread until it is golden brown.
Spoon the tomato mixture over each slice of bread and then grate on some of the manchego cheese. Sprinkle with fresh oregano and serve!
