Tomato purée tossed with olive oil, garlic, and served and fried sourdough bread, finely grated manchego cheese and fresh oregano. Watch the full recipe video here!

Ingredients

4 slices fresh sourdough bread
2 large ripe tomatoes
2 cloves garlic
1/4 cup extra-virgin olive oil
Flakey sea salt
Freshly ground pepper
¼ cup fresh oregano 
¾ cup finely grated manchego cheese

Directions

  • Cut the tomatoes in half. You can use a grater to grate the tomato flesh directly into a bowl, discarding the skins.

  • Drizzle olive oil into the bowl of tomato puree and season with salt and pepper. Let marinade for 5-10 minutes while you prepare the bread.

  • Drizzle olive oil over the slices of bread on both sides. Heat up your skillet and cook both sides of the bread until it is golden brown.

  • Spoon the tomato mixture over each slice of bread and then grate on some of the manchego cheese. Sprinkle with fresh oregano and serve!
