Ingredients
1 lb fingerling potatoes
3 tbsp olive oil
Salt and pepper to taste
Zest of 1 lemon
Freshly grated Parmigiano Reggiano
Directions
Preheat your oven to 425°F.
Wash and dry the fingerling potatoes. In a large bowl, toss the potatoes with olive oil, salt, and pepper.
Spread the potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, or until golden and crispy on the edges.
Remove the potatoes from the oven and immediately sprinkle with freshly grated Parmigiano Reggiano while they're still hot. Then, broil for 4-5 minutes.
Serve the potatoes warm, garnished with extra lemon zest, black pepper, and lots of grated Parmigiano Reggiano.
