Ingredients
Tofu Marinade
1 block extra firm tofu, cubed
1 tbsp olive oil
2 tsp toasted sesame oil
1 tbsp Agave
1 tbsp tamari
1 inch knob ginger, grated
1 clove garlic, grated
Salt & pepper to taste
2 tbsp cornstarch
Assembly
1 demi baguette
Sriracha mayo
Pickled jalapenos
Pickled carrots
Fresh cilantro
Toasted sesame seeds
Directions
Preheat the oven to 400 degrees F. Prep cubed tofu by tossing in a bowl with the olive oil, toasted sesame oil, agave, tamari, ginger, garlic, salt, pepper, and cornstarch. Toss to combine and place evenly on a lined baking sheet and bake for 30 minutes, flipping halfway through.
Once tofu is baked, remove from oven and assemble your sandwich by adding sriracha mayo to the baguette, followed by the pickled carrots, tofu, pickled jalapenos, cilantro, and toasted sesame seeds.
