Roasted Rhubarb
12 oz frozen rhubarb 
½ cup sugar 
1 tsp vanilla extract 

French Toast
3 eggs 
½ cup heavy whipping cream
½ tsp kosher salt 
1 tbsp sugar 
Zest of 1 lemon 
6 slices of brioche bread 


  • Preheat the oven to 350 F. 

  • Add the frozen rhubarb, sugar, and vanilla extract into a deep baking dish.

  • Bake for 15 minutes, stir, then bake for an additional 15 minutes. 

  • While the rhubarb is roasting, prep your custard. Whisk the eggs, heavy whipping cream, salt, sugar, and lemon zest together.

  • Dip your sliced brioche into the custard mixture, making sure to let the excess custard drip off.

  • Melt 2 tbsp butter and 1 tbsp oil into your non-stick pan, over medium heat.

  • Cook your french toast until golden brown on both sides. Top with whipped cream, roasted rhubarb, optionally some flaky salt and more lemon zest!
