Ingredients
Roasted Rhubarb
12 oz frozen rhubarb
½ cup sugar
1 tsp vanilla extract
French Toast
3 eggs
½ cup heavy whipping cream
½ tsp kosher salt
1 tbsp sugar
Zest of 1 lemon
6 slices of brioche bread
Directions
Preheat the oven to 350 F.
Add the frozen rhubarb, sugar, and vanilla extract into a deep baking dish.
Bake for 15 minutes, stir, then bake for an additional 15 minutes.
While the rhubarb is roasting, prep your custard. Whisk the eggs, heavy whipping cream, salt, sugar, and lemon zest together.
Dip your sliced brioche into the custard mixture, making sure to let the excess custard drip off.
Melt 2 tbsp butter and 1 tbsp oil into your non-stick pan, over medium heat.
Cook your french toast until golden brown on both sides. Top with whipped cream, roasted rhubarb, optionally some flaky salt and more lemon zest!
